Orange mousse with Sanguincello

Ingredients (for 4 persons):

  • 4 Egg yolks

  • 6 Egg Whites

  • 100 grams caster sugar

  • 6 grams of gelatin

  • 1 Orange peel, grated

  • 100 ml Orange juice

  • 75 ml Koreman's Sanguinello

  • 125 grams Redcurrants

  • 100 grams Meringue (ready-made)


  1. Split 4 eggs. Beat 4 egg yolks and 100gram caster sugar until light and frothy. In the meantime, soak the gelatin in cold water.

  2. Heat the orange juice with Koreman's Sanguincello, combined with the rasped peel. Dissolve the squeezed gelatin in it. Let the substance cool slightly and mix it with the egg yolks.

  3. Beat 6 egg whites until stiff and spatula lightly through the egg yolk substance.

  4. Divide the mousse between glasses of your choice. Let the filled glasses set in the refrigerator for at least 2 hours. Then serve with some fruit for garnish, for example redcurrants.
